If you were to pick two racing games further apart on the spectrum, it'd be hard to find a wider gap than "Mario Kart 64" and the early-access driving sim "Assetto Corsa". The very idea of adding realistic physics to one of the most tantrum inducing tracks of the series is something only a derelict or perverse mind would think of... which brings us to N64AC, who built, stretched, and tweaked Rainbow Road into something that was even possible to drive on.
